Ponal is Holzleim/woodglue. I wonder what the difference is between the german ponal and the british evostick.

I don't know - I just know the Ponal is non toxic and virtually odourless, so no fumes. It has a very slight smell initially but that's quite pleasant! I got it originally because I was so cautious and it's what the German hamster owners used on their wood items as being safe. Someone did comment once, that any strong wood glue is ok, once the fumes have dissipated and providing there's no visible glue to chew on. But I really like the Ponal! And I don't like fumes myself. No idea how long they would take to dissipate completely. I don't really know what evostick is like.
