There are some good recent threads on the boards for taming. One quite recently about how to handle your hamster when you're scared it'll bite you.

Some hamsters will think your fingers are food. Their eyesight is bad so they can't see your fingers very well. if you smell food on your fingers they will go for that. So try washing your hands in up scented soap first to make sure there are no food smells. My Syrian will take food from my fingers but does the same thing as yours if I try to give her food from my palm. She'll let me pick her up though.
You might find you just need to skip the food on palm stage & see if she'll walk in your palm without the use of food. And you can try wearing gardening gloves of you're worried about biting.

Wash your hands thoroughly then rubbed your hands in the substrate. The substrate will have her scent on it.

If you have ate before you go near you hamster they may smell the food on your fingers and decide to bite you/nibble (Happened to me once so always wash your hands REALLY WELL) especially chicken. You can put the food on your palm and the hamster will climb on your hands to get the food. There are plenty of videos and websites that help you tame your hamster!

Once your hamster allows you to hold them you can start putting them with you in a bath/playpen with toys! there is a couple videos on that. Hope it helps and good luck on taming!
