Default Cupcakes ;)

Hi everyone!

For a while now I've been trying to find a good cupcake recipie, but I just can't get my hands on one! All of the ones my sister and I tried are dry and tasteless! Not sure it's because of my horrible baking skills, or if the recipe just isn't right for me.

I'm really in the mood to bake some cupcakes this weekend!
Anybody want to share some cupcake / cake recipes with me? Hehe.

This is not the easiest recipe (cooking caramel is a nightmare!) but these are the best cupcakes I've ever made, we do them every year for Christmas!

Gingerbread and Salted Caramel Cupcakes
I have another red velvet one saved somewhere but I can't find the exact one on the iPad. Red velvet cupcakes in general are great. Especially the cream cheese frosting, YUM!

mhmmm They look so good! I'll have to try them one time, thought not sure it will be this weeekend!
By the way, what is caster sugar? I come from the U.S, so http://www.dominosugar.com/sugar/granulated-sugar <-- This is the kind I use, do you have any idea if it's fine to use in the BBC recipes?

I googled it and I think caster sugar is called "super fine" sugar in the U.S. Thats literally what it is, it's just very tiny grains. I'm not sure if larger granulated sugar would make a difference, I can't imagine it would ruin the recipe or anything.

The best recipe is always the most simple for me- I usually weigh the eggs (out of the shells) then do the same weight of butter, sugar and self-raising flour.

Mix butter and sugar first, then add eggs and mix really well. Then add flour and mix but not for too long. Then divide into cases, and bake on quite a low heat (I put it on about 140C fan) for about 20-25 mins.
