Hello smidgey . By no means are you being silly. Phobias can be truely disabling. I worked many years as a psychotherapist and have seen lots of folks with varying levels of phobias. The smart thing is to deal with it before it really does impact on your life to the point where you are allowing it to stop you from doing the things you enjoy. Don't let your doctor brush you off if, after you see the test results, you still are feeling like this. All of the advice you've been given is great. So, follow it if you need to. You are quite right to see the doctor and I hope you can get some help and can overcome this. We will all support you and wish you well.
If it helps I've been all inclusive to Turkey and I never got sick at all. The food was all chilled / in glass cabinets and in air conditioned areas. It was always cleared quickly and completely between meals and eater so quickly that it never had the chance to sit around!
Some places offer the cook as you watch stations so you could choose your stir fry or pizza and they were cooked to order so you will know they are well done. Hotels won't want to risk their reputation with outbreaks of food poisoning so are very strict on hygine so I wouldn't worry.
