I've tried a few different foods and settled on Bunny Dwarf Hamster Expert for dwarf hamsters. I find it's the one food where everything gets eaten. I buy it from Zooplus. I think it has too many small seeds to be used alone for a Syrian though.

In terms of homemade Etsy foods, it could be hit and miss. Some might be great and others might be seriously deficient in something. I do mix my own food for my gerbils and would consider doing it for my own hamsters in future, but this is following a huge amount of research, and personally I wouldn't buy homemade foods online when I don't know the individual behind them and how much research they have done or how much knowledge went into formulating the mix. Commercial diets are laboratory analysed to make sure they contain the right nutrients.

I also use the Bunny Dreams Expert for the dwarfs and Harry Hamster for the Syrians.

I think Zooplus was running low on stock because of Brexit. The larger quantity was no longer available when i ordered not long ago.

Rodipet is another option or RatRations but i had a bad experience with RatRations. I wouldn't buy food from Etsy either and prefer to stick to established and tested brands.

As Ria and Sushi have already said, for dwarf food the cheapest I would recommend is the Bunny Dreams one, for syrians would be Harry Hamster. If you want to spend more, you can look at bunny dreams for syrians, or for all species of hamsters rodipet/getzoo is probably the best you can currently get

from what i've seen of harry hamster, i'm just unsure i'd want to feed it to them. my guinea pigs had the same food from the brand and i just wasn't happy with the quality of it.
& to be fair, i did get as much from the etsy brands. they look good, but i just can't trust it, so was just seeing if anyone had found a reputable seller. that's all good though, i'll keep looking as i don't know if i'm getting a dwarf or syrian yet. depends what comes up in the next couple weeks (might be getting the cage even sooner!)

also, not to be annoying, but does anybody know any wood shavings i can get? the cage is going to be really big, and i can't find any bags apart from really small ones or ones that aren't suitable for hamsters.

Wouldn't recommend wood shavings for the entire tank. Paper based substrate is better and the 85l bags of Kaytee clean and cozy expand a lot. Smaller bags work out more expensive. Available from Porton Aquatics.

Fitch is another popular choice which i haven't tried myself.

If you are set on woodshavings i believe the only suitable one is Allspan which they use on the continent and is made from spruce. Available online but works out expensive.

Chipsi classic comes in very large bags and is part spruce, available from Jolleys pet shop.

Aubiose (i think its called) from equastrian shops or online is another but quite coarse in my opinion.
