I know I'm a bit late to the party, but one of the sticking points seems to be the use of a water bowl.
If you used a coop cup (normally used for birds but would work for a hamster that likes a bowl rather than a bottle), it would allow you to attach it to the bars but above the substrate. Would that give you a bit more flexibility?

It probably wouldn't make much of a difference to be honest. I switched him to a water bottle and took the water bowl out just to get the set up how it is now or else I wouldn't have been able to have the plywood corner house in. He doesn't prefer it either way - it's me that prefers bowls because they're quieter than bottles. The way I had originally wanted to do it and was having an issue the bowl wasn't in the way at all, it also isn't on the substrate, it was on a level.

It sounds great. Glad he is happy. A lot of cages just have top access. My only concern would be if there could be fall risks from the top if it's open all the way up.

He doesn't climb. He's been in there for about 7-8 months now and has never climbed the bars. Even if he did climb, he'd fall onto about 18cm of fitch. If he does start to climb, I would just use one of my rats spare hammocks to stop him falling.
