To keep my hams interest in their enclosure, I try to add different materials for them to play on, rest on, or chew on. I add things like tile, sea grass hammocks/mats, large wooden toys, and other such items. I find all of which they tend to enjoy playing on and around. I too also recommend the sand bath, especially for dwarf hamsters (I've never owned one but heard that they tend to enjoy it a lot). Adding a smooth pile of stones, or a tunnel of loofah could be good to help your little one enjoy their bin more, and you to enjoy customizing!

Thank you everyone for your suggestions, I'll definitely be looking at implementing some of them.
I've already put in an order with my sister to pick me up some of the wooden magazine folders next time she goes to the Ikea in Southampton so will be building a new one for Jessie as well as one for Matthew.
James has that curved bridge that you linked to Chesca and he really likes it. He sits under there with his Whimzees chew sometimes. He's also got this one: http://www.petsathome.com/shop/en/pe...e=45&orderBy=1 that you linked to and it's another popular toy with him, I don't know why I've not thought to buy more.
Matthew and Victoria have the rainbow bridges but the shop only had one in stock when I bought Victoria's new one. I'll have to pop in sometime and get a few more I think as it went down quite well with The Nobrias when they were young, I didn't have the heart to take it off of Matthew to give it back to Vicky when the pups were rehomed.
I'll be sure to post some more pictures when I've experimented with some of the ideas.
