Unhappy desperate need for advice

ive mentioned it before in a previous thread but i have no idea what to do to help my syrian hamster Bandit. ive had him for about 5 months and he was tame when i got him from the breeder ive probably only held him like 3 times since i got him because of how anxious he is. the last time i held him he was fine at first then i could feel him physically shaking in his feet so i started to move slowly to put him back but he started scrambling out my hands and i didnt want to pull on his long fur or squeeze him causing more stress and possibly hurting him so i moved him faster towards his cage but he leapt straight out my hands onto a bag of shredded paper and he just sat there and i was able to lure him into a plastic container with his seeds and get him back in his cage. ive been really scared of taking him out the cage since that incident

i still talk to him and hand feed him and he doesnt seem scared of me because he will happily sleep out in the open on his wheel and wont freak out if i open his cage to refill his bowl he will just wake up, sniff, then get back to waddling on his wheel another reason i dont think he's acting like this because of me is because when he's eating or filling his pouches he wont mind me petting his back and sides he doesnt jump (flinch) unless i do it without talking first but its never a reaction like the usual freak outs he's been doing (jumping high in the air/sprinting) but i was wondering if there is anything i can give him to help with his anxiety because i read they can get sick if they are anxious/stressed for too long and he just seems to be getting worse there have been times where ill just be sat in my chair on my phone then he just jumps 25+cm into the air (not exaggerating i couldn't believe it myself) and he runs across to the other side of the cage panicking like somethings trying to kill him and i dont understand whats scaring him. i dont change anything in his cage, i dont change huge amounts of bedding so its all still smelling like him. ive tried these "calming treats" from pets at home which were supposed to help and as far as im aware are completely fine for hamsters because he loves them and hasnt had any negative effects since trying them but they dont seem to have any effect on actually calming him down i just dont want him living with this much stress/anxiety when he's already in a calm quiet environment where nothing bad happens but he seems to get worse and worse. he still eats, drinks, runs on his wheel and burrows/forages but almost every night he does this freak out where he jumps into the air and sprints really fast around his cage like somethings after him he's done it a couple times when he's in his burrow and ive made a little noise putting his water back he will do a mini freak out and i'll hear him jump and run a little under the paper which is why im certain its stress/anxiety related
sorry for this being so long i just really need some advice on what to do to help him again he doesnt show signs of being scared of me he will just be sat there sometimes filling his pouches then he'll freeze and freak out i dont want to try some of those calming drops and stuff unless people actually suggest it and think it would help because ive read it can make hamsters stop drinking their water because they dont like the taste another one i found was a pet remedy calming or bonding kit? again i dont want to just rush into buying this stuff if it can cause them to get worse or something so if theres anything else people can suggest that would be great
