Default Are Sunflower Leaves Safe?

I recently came across a sunflower plant in my neighborhood whose leaf had almost completely come off. I decided to take it home to dry it in case hamsters can eat them, but the results of my research have been conflicting. What do you think?

I'm wondering the same thing, I've got a massive sunflower growing and would like to dry the leaves for foraging mix. I have searched online and everything brings me back to the sunflower seeds but I can't find a clear answer on the flowers, stems, or leaves.

Sunflower leaves are safe. I've fed them before. I believe the whole plant is probably safe. I haven't fed the stems before but someone on another forum feeds them to their gerbils without any problems. Apparently they contain a kind of milky sap.
Bramble (Russian dwarf) and Lily & Daisy & Storm (gerbils)
