Your hamster is foraging his food! All hamsters do this and it is a totally normal thing for a hamster to do

They'll stash it or dump it in their wheel and run so they make a ton of noise in the middle of the night! I used to have a hamster that did that. The food would fly everywhere, then she'd pick it up and start over!

Mine has a large nesting box, she has her larder at the back where she puts all her foraged food, then her nest, and she toilets at the front by the door. She even kicks the poop out the door for me to pick up

I'm thinking of doing away with her food bowl as i've been scatter feeding the past 2 nights to give her something else to do and she's found every last grain.
