If taking 2 will leave one alone for life (rather than the breeder keeping him with Dad), then i'd go for the three. I've had a couple of trios, one of them worked fabulously they did everything together (including trying to run 3 at a time in one wheel and ignoring the two empty ones!), the other there would often be one hamster left out, but he was a "quieter" hamster and the isolation seemed to be something he chose to do when awake as he slept with the others, though of course we can't really know how they are feeling. Like Mick I normally try to keep even numbered groups though due to the "pairing off" tendancy.
With regards to feeding, I always use a foodbowl for groups - if there's more than 2 then I use 2 food bowls, I like to be able to keep an eye on how much food is being eaten. Same with water bottles - more than 2 hams get 2 bottles, just in case they all decide to drink at once.
Toy and house wise, make sure anything they can get inside in has more than one entrance, that way two couldn't block the other in at the back. Add toys one at a time, and allow them to adapt rather than suddenly filling the cage with things they can each claim. I would also suggest a single level cage, to be on the safe side.
When you clean out, adding around 1/4 of the soiled (avoid the wet corners) substrate back helps keep the scents constant, and removes that as a fight trigger, and never cleaning everything (cage and toys) at once. I would get them a large enough cage that a bi-weekly cleaning is suitable, then you can clean the cage one week, the wheels etc the next week.
