when should I start the taming process with my boy?

I would give him at least a few days if not a week to just get used to his new cage.
If after a few days he seems to be settling in well you can talk to him and try to offer him some food to try. I would only do this if he seems to be quite interested, if he is running away I would leave it for at least a week. Sometimes you have to leave it even longer, it really does depend in the hamster, but normally I say no trying to pick them up for the first few days at the very least, I know it can be tempting but patience with them does really pay off.

I always wait a week, if they’re quite timid still i wait a few days longer and just get them used to me being around them and their cage, and hearing me speak etc.

Depends on the individual hamster.
One of mine was tame when i brought her home from the pet shop and another, a rescue, was very scared so i left him alone for two weeks before starting to tame him.

My new roborovski is just starting to come out and about when I am around. He is easily spooked though.
