You could try hanging the bottle from the roof so it swings. They can still drink but tend to not be able to get a grip to chew the bottle. It works for some people.
With bottle chewers we tend to have a bottle during the day and take it off at night and use a bowl. They usually just get up for a quick drink in the day and don't chew.
It's not good for them to do it though as too much water strains the kidneys and upsets the body salts balance.

thanks guys. i've swapped his bottle for a bowl (i've seen him drink out of the bowl so i'm happy). I've also got some polycarbonate to cover the part of the meshed roof he can get to. Now he'll have to think a bit more about what trouble to cause next :P
