Default Hamster Biting

My timid little Chinese hmaster has now taken to biting me, he's always been shy, though he's getting much better, coming up to see me when I talk to him, and not running if I open the cage door, but I can't get my hand in the cage without him biting! I'll just lay my hand in the cage, and he'll watch from a distance, then come up, sniff around, even crawl on my hand, then for no reason, just bite. It seems almost like an experimental nibble than a real bite, but it still hurts a bit, and it startles me, which in turn startles him. I do wash my hands before putting them in the cage, is there any way I can stop the biting?

he could just be cage territorial... have you tried scooping him up in a small box to get him out and seeing if he still bites when outside the cage?
