Three quarters of an inch
That was all that the hardware store had, and they could cut anything an inch or below in thickness for me, so I went with it. I don't think the thickness matters
that much though. Obviously you don't want it too thin to hold itself or too thick to work with, but I think most melamine sheets will be around the same thickness anyway.
