Congratulations on adopting your first hamster! It sounds as though you are getting on well together. All the behaviours you describe are 100% normal. Hamsters will come out when they are ready, but are often timid in a brand new environment (new smells, new house, new toys, etc), and as she gets to know and trust you she may well begin to come out more, especially if she's expecting treats.
The quiet "grinding" noise you describe is likely to be a grinding back of teeth or nails. Hamsters' teeth grow constantly, and need to be worn down by chewing on things. Make sure she has plenty that she can healthily chew on.
Hamsters are very clean little animals, and do groom a lot.
I'm not sure about calm music. I'm a self-employed music teacher working from home, so our hamster gets all sorts of music at all sorts of times during the day. She hasn't seemed to mind so far, although she's been with us for almost a year.
