re the taming, I have found think the best way to stop hamsters from biting your hands is to actually go all out and offer him you hand with no food on. Yes, he may bite you. But over a bit of time he will learn that your hand is just not there as food and he will learn that it is a) harmless and b) not edible which goes a long way to the taming process.
