Welcome to the forum! It's not really a concern that Hammy isn't keen on being handled too much - some hamsters just aren't. I wouldn't be unduly worried about the food issues either, although it's not a good idea to make any sudden changes to his diet. As long as he is eating and drinking, reasonably active and alert, he sounds fine. Just keep an eye on him in case his behaviour changes.
