It'll be fine
I think Plastikote is virtually odourless and I have a sensitive nose - it certainly is once it's dry. It is a water-based pet-safe waterproofing paint, rather than a varnish as such (varnish is oil based). People on here have been using it for years - wood wheels that hamsters chew etc.
