Two nights away is the maximum you could leave them on their own really - putting extra food out and an additional water bottle. Maybe someone could pop in just for one day to put some food out? It wouldn't be a lot to do. I got a petsitter to come over and do it
If they put it out during the day then the hamster will be sleep so not likely to escape. It would need to be someone you trust to just do what you ask though.
I believe a lot of breeders have their litters around spring time due to the better weather by then, so if you're thinking of one from a breeder, then contacting them now would be good as they may have waiting lists.
Otherwise, rescues have hamsters all year round
Smaller pet shops sometimes breed their own hamsters as well.
