She looks lovely!

It shouldn't scare her if you just put a little more bedding in, you can try & do it when she's asleep.
Her water bottle looks ok, it's always difficult to be sure if it's the right height until you see them drinking but it should be fine.

It's perfectly ok to just put some bedding in the litter tray for the time being.
Play sand needs to be sterilised & dried in the oven, yours should be ok if you do that but I can never remember temperature or time for baking sand!
