Hamsters can do ok without any fresh food but I always give it to mine daily, it gives them extra vitamins, minerals & fibre, helps with hydration & is a form of enrichment.
They should always be introduced slowly, so a piece once every few days to begin with building up to a daily portion.
They only need a small amount, some say about a 1cm square but I give mine more, they rarely eat more than they need & as long as they don't hoard any you can just remove what's left the next day, it's best to check the hoard every now & then to make sure they haven't stashed any wet food.
Variety is important, experiment a bit as they don't all like the same things but try to give something different at least three days before giving the same again.

This is my list of safe veg if it's any help, I haven't included fruits as I made the list mostly for diabetic prone species but syrians can have a little safe fruit once or twice a week.

Safe veg, those marked * are relatively high in sugar so only feed to diabetes prone species as an occasional treat if at all.
