To do nails you could either get someone else to hold her while you do it or swaddle her, basically wrap her in a towel while you get one paw & trim the nails or you could try putting her in a sieve so the nails come through the holes & do it that way, it's often easiest to just do one or two at a time so they don't get overly stressed.
A good vet should know how to hold a ham while trimming nails.
