To me, it's largely when they will allow you to pick them up and stroke them without jumping a mile! It's usually fairly obvious when a new hamster is tamed. They start off by running every time you try to pick them up and won't stay in your hands without wriggling off. But, as they get used to you, they will allow themselves to be picked up and will walk from hand to hand rather than nose diving for freedom!
