Not sure about kicking bedding at you, I've never had that happen but it may be a sign that she doesn't want to be disturbed or have your hand in the cage possibly.
They do move nests from time to time but if you can see her sleeping I'm wondering does she have a proper house, something big enough (preferably not plastic) with no base on a deep layer of substrate with plenty of shredded toilet tissue to make a proper nest? She may be sleeping in different places because she doesn't have anywhere that's really suitable but I can't really say not knowing what your set up is like.
