Has anything else changed that might have upset him & caused him to get stressed as that can start them chewing. Any changes in cage, general environment, food or anything else you can think of?
If not he may have a problem with his teeth or mouth that's making him chew, if one tooth is broken it might well be worth getting your vet to give his teeth & mouth in general a good check over to see what's going on & if anything may need clipping.
