I'd go with cucumber rather than melon too & it still might be worth checking with the vet about the smell to be sure that is a side effect of the meds.
If she's peeing a lot she obviously needs the fluids to stay hydrated, I wouldn't try to reduce them either water or veg as it probably won't make much difference to the poo if that is caused by the meds.
