Your list of veg is fine, only small pieces so yes do chop the carrot into a little cube or stick, lettuce is ok as long as it's not iceberg just not too often.
Peanut butter is best avoided as it can get stuck in their pouches far better to give them a monkey nut to chew on!
Baby food with no sugar, spices, leek or onion is ok as a rare treat but is most often used for elderly or sick hams.
Fresh veg should be fed daily but get her used to it slowly.
Egg is ok as a rare treat but chicken unseasoned plain cooked can be given once or twice a week.
Not sure about the puffs but think you'd probably do better with something more natural like a sunflower or pumpkin seed tbh.

This is my veg list if it helps, I'm sure I've still forgotten a couple of things but it's fairly complete.

Safe veg, those marked * are relatively high in sugar so only feed to diabetes prone species as an occasional treat if at all.
