Bar chewing is the bain of our lives. Some hamsters just love to do it and there is no way of stopping them really apart from moving them to a tank type cage. It is not always boredom, more a habit they get into. If he is damaging his nose then you may need to consider moving him into another cage. You could try lots of cardboard boxes for him to trash, hard dog biscuits and weaving cardboard through his chew area so he cant get his nose through.
