getting used to hands
How do you get a hamster used to being held when they are almost as big as your hand.

Like when I hold Yamagi he all ways tries to jump out if I don't hold one of my hands on top of him.

He should stop trying to jump out as much when he gets used to being held. Try holding him in a taming box, playpen or his cage. This way if he jumps he doesn't fall far and you won't loose him under or behind furniture etc.
Food can be used to distract him from jumping off your hand.
