Default What's for tea?

During the pandemic many items have been flying off the shelves making it difficult for people to make meals.

I for one struggle to find foods, even something as simple as soup, because the shops stop selling it/don't sell it or its sold out.

I thought it'd be nice to start a thread for those of us struggling with food during this period. Have some recipes which are super easy for everyone including key workers as well as those with disabilities.

Every recipe can be adjusted to suit anyone's diet. If you have any questions please ask. After all nothing brings people together like a delicious meal

I'll start:

TOMATO SOUP (VEGAN, GLUTEN FREE)

Serves: 4-6

Can be frozen.

Ingredients
1 carrot
1 onion
1 stick of celery
Tomato puree (I used a lot so depends on how tomato-y you want it)
2 tins of chopped/whole tomatoes (you can use fresh)
Salt, pepper and sugar to taste
2 stock cubes (I used Knorr vegetable stock)
2 Bay leaves
Cooking oil of choice

Optional
Flour or cream to thicken.

Method

1• Add oil to sauce pan. Chop all veggies. Try and get it as small as possible unless you don't mind chunky soup. Add veggies to oil and cook until soft and pale in colour (remember to stir so it doesn't stick)

2• Add in puree. To begin with I added ~3tbsp. I added more later. You just want to coat the veggies red. Add salt pepper and sugar. Add tomatoes. Stir. Pop the lid on and leave to simmer for 10-15 minutes or until tomatoes are soft. Give the saucepan a little shake to keep things mixed.

3• Follow the instructions on the pack for 2 stock cubes. For me, 2 stock cubes need 1000ml of boiling water.
Carefully lift the lid and add the stock mix to pan. Add a few ripped bay leaves (if you're feeling fancy. Don't worry if you don't have any). Mix, pop the lid back on, bring to the boil then leave to simmer for ~30 mins.

4• Optional: add thickener to reach the consistency you want.

5• Optional: transfer to blender and blitz until smooth, checking regularly. Or leave as it is and serve/ put into containers and pop into the freezer
