I'm guessing by soft shavings you just mean they feel soft? If you can find kiln dried pine shavings or aspen shavings they're usually fine, some hams can have a reaction to them but it is rare so don't get overly worried by that.
Can't get to see any of the products on that site unfortunately.

The moss will not transpire however as it is already dead and no longer functions as a live plant would. As long as your hamster isn't peeing on the moss, and you're not spraying it with any liquids, I'd say it's perfectly fine to have it in the cage. I've used moss with almost all my hamsters with zero issues, and it's absolutely lovely looking in a natural/German style cage. Monitoring it and keeping good ventilation (both things which should be done anyways) will usually prevent any issues
Couldn't have put it better really!
I have moss in one of my cages, I'd probably have it in more but it is a bit of a pain freezing & cleaning it, I wash mine in boiling water & it pongs a bit until thoroughly dried again!

I do agree that live plants in the cage aren't a good thing, plants need moisture & lots of light which you won't want in a hams cage but you can always grow things & just put them in for short periods for your ham to enjoy.
If you want to try something like that have a look here.
