I haven't heard before of lettuce being unsuitable for hamsters but will see what I can find on that topic... my little ones get a tiny amount of butter lettuce or cos lettuce very occasionally and they love it!
With regard to the Versele Laga food, I've noticed that the formula changed a few months ago as there were never any pellets before if I recall correctly? I notice that my little ones tend to leave the pellets and eat all the other ingredients of the mix which does concern me a bit as I believe the pellets contain important nutrients.

Lettuce is one of those things like cucumber where its a lot of water and not a lot of nutrients. Its not inherently harmful but if your hamster isnt used to it or eats too much they may gave an upset tummy.
As for the pellets in your mix, honestly most hamsters dont eat pellets and they’re generally hay or alfalfa based which they cant digest well so dont really get the nutrients out of them anyway. If youre worried, adding a lab block such as mazuri rat and mouse to their diet will ensure your ham gets all their nutrients.
