Drinking Water
Okay, so, Chi hasn't been drinking a lot (if any at all) of water recently. However, she has had a carrot (and sometimes a bit of apple) in her cage every single night and loves to eat it.
Should I be concerned?

As long as you're absolutely sure the wattle bottle is working fine, then I wouldn't worry. He'll drink what he needs and is probably taking enough, just such tiny amounts that you don't notice

I'd really check the water bottle. When you turn the nozzle it should freely give water. If it doesnt, return it. I'd put a bowl of water in your hammys cage asap!
ALOT of water bottles are defective. I had to drive an hour to a different city to buy about 7 water bottles. There is defective water bottles in every pet store in my city. Even if you order on-line, once I ordered 4 bottles on-line & only one of them worked.

Hamsters barely drink any water at all. Being desert animals originally, it's an adaptation they have- it allows them to survive on little to no water. It's very likely he is drinking, but just when you're not looking. If you're super paranoid, a bottle cap filled with water will suffice best wishes
