Default Advice, new hamster

Hello!
I am relatively new to hamster ownership.. I bought my Syrian, Gus, at the beginning of Feb this year.

The girl at P@H sold me a cage which was very obviously too small. 4 weeks later I bought a second cage and joined them together with tubes. Gus has grown A LOT and is nearing 200g's (I've been told he is very big for his age- he is currently 193g and nearly 5 months). He looked big in the 2 cages joint together so I have bought a 52x100cm cage which is due to arrive tomorrow.

My questions are:
When will he stop growing?! I am hoping he does not grow out of this new cage as it was so expensive.

How much should I be feeding him? I don't think he looks over weight and I have read mixed things online... I am currently feeding him 1tbs of muesli a day, plus veg & treats every 2/3 days.

How do I keep him from being bored? I am hoping with his new cage he will have more space to run around, however in the evenings he comes out for 40 to 60 mins (handling, playing in the bath tub, in his ball or running around on the bed). When I put him back in his cage he want's to come straight back out again. In his cage he has a 12 inch hamster wheel, large sand bath, chews, toys, 3 houses, tubes etc etc. I also scatted feed him. Is there anything else I can be doing?

My last question is about bedding... when I first got him I started using shavings, recommended by P@H. I then read it is not great for them to switched to care fresh, however I have been trying to use up the bale of shavings I have got, so do half and half. Gus never burrows in the care fresh and loves burrowing in the shavings.. is there something else I can use?
