Hello and Welcome to Hamster Central.
I just noticed that you hadn't yet got a reply for your question. I personally don't advise keeping hamsters in pairs as they live perfect happy lives living alone - also looking after pairs can be quite challenging to prevent fallout/fights from happening as they can happen very suddenly - and pairs often end up falling out so I would advise housing one hamster per cage.
If you want a hamster species which isn't prone to diabetes I would recommend a single robo (or lone Syrian).

The only hamsters that can be kept in pairs are Robos & winter whites (not pet shop hybrid Russians or Campbell's), I tend to agree with SKB, it can be very challenging to keep pairs & the majority do seem to fall out naturally as they mature, if you haven't had pairs before I would suggest starting with just one, a lot less stressful for both you & the ham/s!
If you want to avoid the potential for diabetes then a robo, a Winter white (breeder ham only be sure it's won't be a hybrid) or syrian.
