My heart just melted completely, she really is the sweetest little girl
Sounds as though she's enjoying her new home already, look forward to hearing more as she settles in.
The alaska is a great cage but it is quite tall so you do need to make sure she can't fall if she decides to do a bit of bar climbing!

What a beauty Sapphire is! I love her name, too; how fitting since she is as precious as can be!!! I'm glad that she is settling in well and enjoyed her cucumber. So it is day one of hand feeding and it seems to be going well! She will take cucumber from my hand! She doesn’t seem to like th mealworms so I am hoping she will get to like them. She seems to like the new food ☺️

I'm glad that she is doing well taking cucumber from your hand and likes her new food. Don't be concerned if she doesn't like mealworms at first, some hams including my Eros needed a bit of persuasion in the beginning. Silly as it is, she protested in the beginning but now it is one of her most prized and loved treats of all. She will do just about ANYTHING to get some which works out great for the both of us, lol. Have fun and enjoy your first day together!

So as you guys know I have the Alaska cage for Sapphire but I walked in on her climbing over the top of the bars and I am terrified she might hurt herself if she falls (someone did mention this but it was so much scarier seeing it in real life). I have lots of substrate in her cage though. I have been looking at the Multy Duna. I know it is smaller but I think it might be better for her as she can't climb up. It's currently 37 pounds on a garden aquatic centre site so I might be tempted to go for it.
I could always use the Alaska cage as a spare for my Syrians.

This is a common problem with Russian hams, they do love to climb given the chance but it's not a difficult issue to resolve.
You can use things like small bolt on shelves, lava ledges & similar things to break up the expanse of bars, give her another level to play on while preventing her from having an easy way to climb too high.
As a temporary measure you could just get some strips of cardboard that are too wide for her to climb over make a few holes in them & attach them to the bars with cable ties to create a barrier.
