Saying he wants his own way is attributing too much human-ness to it. Maybe think of it like your hand gets in the way, he tries to chews it the same way he would say a piece of wood that he found in his way and wanted to get through, your hands get in the way an awful lot, he now recognises your hands as an obstacle to be chewed through...
Is there any way you can take your hands out of the equation when it comes to stopping him, e.g. Securely fence off somewhere else so you don't have to stop him with your hands?
Nibble would nip (not bite, it's v gentle) if I kept holding him when he wanted to get down and explore, I've hamster proofed my hallway now so he runs around there and I never have to use my hands to stop him going anywhere as there's no dangers. His relationship with my hands is much improved,
