I might try scooping her up but I strongly suspect it would end in me getting bitten, and/or her climbing out of the cage

Peekio is in the stage of wanting out.. I scoop her when she goes in the wheel as its easier then quickly hold her to my chest then let her go for a roam...I think frequent handling is the key.. short sessions to start with

Aw it just takes time, that's all. And i agree, feeding her etc could be done in the evening, where you're not under stress.
have you tried the bath technique? because that worked wonders for us. even for the nippy ones.

for our gerbil, getting her out's the hardest part of cleaning out her tank! being possibly one of the most socially awkward gerbils around, she won't come near me at all and keeps herself to herself. so i get her out with a tube or a box with a lid (lie box on side, slide lid over it when she's in).

The majority of my hams have taken weeks to become tame, some even months!
She won't be tame until you've picked her up and shes experienced your hands.
I'd say I'm pretty pushy when it comes to taming, some hams will avoid coming on your hands, so in this case you'll have to scoop them up.
I've always found short but often scooping up works best (two hands either side of her body and then slipped under her) and as long as you hold her over the cage base its safe if they decide to jump off your hands.

I don't think anyone can offer the perfect solution cause every ham is different. But you don't need to worry x

The cage is small - put the entire thing in the bath or a big box and take the wire part off the base.
Voila - one hamster out, safe and ready for taming.

Try not to panic. I got Storm on Sunday and he's not at all tame yet. I am treating the fact that he no longer shrieks and hisses when I open his cage as progress. He won't take a treat from me yet so you're doing OK

how about giving her a peanut. or a slice of carrot, she will be distracted by that and you can fill the bowl. it can take a good amount of time to tame a hamster, from a few days to a few months, fred took a bit over a month because he was really cage territorial, if you have a ball, why not use the lid of the ball, take the lid of the cage off, and let her walk on or encourage her on, if she isnt keen on hands, place one behind her, so the lid is infront, she will walk onto the lid, lift her out quick but steady, try not to let her walk off, she shouldnt if its moving, then from there you can handle her, as its most likely the cage being her territory that makes it hard to tame.
x

added, as wh says, dont have her out for an hour, have her out for a few mins, if she is good put her back in, leave her for a few hours, (maybe before you leave, give yourself lots of time, then when you get home, then before bed) she will soon get used to it, jane used to be a nightmare now you open the door and she comes out to you!
