Hiya, I've never tamed a Syrian before, as my big G arrived tame, or rather probably so relieved he was lovely so I didn't send him back!!
With my robos, I have found they are all different, and will all progress at different rates. I've had one never tamed, but that was how he was meant to be, and part of what made hi him, I have one very very shy little man at the moment, and it's tiny little steps with him, the slightest thing setting him back a few days. I also have bold hams, hams whose trust I have gained, and hams that are reduiculously excited whenever I come to see them. Whizzbit it always like and excited little puppy whenever I open his cage, and he lives with Rolo my incredibly shy liittle guy, so as I say totally individual.
That was quite a long way of saying that it's impossible to put a time on taming, it does sound like you're doing really well, and Honey is getting on very well too so that's great. She's just a baby, and making good progress, and you're not pushing her, couldn't be better!
Hopefully someone else can give advice about Syrian disturbing, George is up at pretty much the same time every night, and the robos are up and down from dusk till dawn so a more experienced Syrian owner can shed a little more light.
