I also agree that the hamster mix is a bit off - if you have access to the Harry Hamster mix, that may be the best ready mixed hamster muesli that's easily accessible in most places. It has 18% protein, 6% fibre, and 6% fat. I have been using it for all my hamsters (Syrians) without any trouble Hamsters do need some animal protein too (which isn't in the mix) so keep up with the boiled eggs! otherwise I think you're doing fine I don't know if anchovies are safe, unfortunately (but you seem to be giving your hammies enough veg that I wouldn't worry about just skipping anchovies!)
