Creating Food Logs
I want to add some more things to entertain my hamster. In the store, I saw these treat logs that were a seed mix stuck together with honey. I know honey is very sugary and not a good thing to give often. I was wondering if I could take her seed mix and make one. Any suggestion on healthier options to make it all stick together? I was also wondering if I put one in if it could replace her food bowl just for some added entertainment. I know that I should monitor her weight if I do switch it. Anyone have any suggestions on this? If it isn't a good idea, I won't. She has plenty of toys and I thought about scatter feeding her, but she's completely blind and thought this might be a better idea.

I wouldn't take her food bowl out if she's blind because she'll know where it is. Hamsters usually only eat what they need but like to hoard food so the food that disappears from the bowl doesn't always get eaten.
You can make treats and toys by coating for example a cardboard tube with a mixture of flour and water and then stick some of her mix, seeds, herbs etc on it, let it dry and put it in the cage for her to find.
A small box with holes and a couple of seeds in it is popular or a cardboard roll with slits and seeds stuck in them. There's lots of stuff you can make to keep her entertained.
Have a look on youtube for ideas to make hamster toys with added food.

Okay, I won't replace her food bowl. I didn't even think of the fact that she knows where it is. Thank you for the suggestion of the logs. I'll check out YouTube for some more ways.

it isn't what you're asking but my hamster likes digging around in a normal cardboard egg box with treats under a small amount of bedding as a fun and free way to give food.
