What nuts and seeds can you feed a hamster(U.K.)

I give my hamster walnuts (in the shell). They can get fat from them, so limited.
You can also give monkeynuts, sunflower, flax (linseed) pumpkin seeds. Just make sure they are all raw and not salted or roasted etc

To add to this question while we're at it:
Can they eat raw sunflower seeds? I got a bag of shelled raw sunflower seeds and i dont know if i have to "bake" them or it's okay to give them like that
