I've given my Chinese Hamsters (Chinese are also a diabetes prone species) a small amount of scrambled egg on occasions although they're not overly keen on it.

If you're making some anyway, there's no harm in giving her a small amount although for a first taste I'd tend to give them a slightly smaller amount than I'd give if it was something that they'd eaten before and enjoyed.

Totally safe, but in future, if you can, avoid using milk or only use the tiniest amount as some hammies are lactose intolerant.

I used to make it with milk (Charlie had our leftover scrambled egg) and it didn't seem to do any harm, but once I realised about the lactose thing, I just scramble it on it's own now in a cup. One egg and a teaspoon of water and microwave for a very short time - check every 10 seconds. Then about a quarter of teaspoonful on the end of a teaspoon and our hammy grabs the teaspoon and eats it from that (meaning you can take the rest away when they've finished so you don't end up with smelly old egg festering in the cage!)

You could also chop up a hard boiled egg and put a bit of that on a saucer and give it out of the cage.
