As far as I'm aware all millets are safe, the only one Mixerama sell that I'm a bit unsure of is the green millet, I don't see any reason why it wouldn't be & it seems like a natural food for them but I have no idea what if any the benefits of slightly unripe millet would be.

Just thought I'd update this thread. I'm running out of Jasper's food and have created a new mix on my Excel spreadsheet. I have made quite a few recipes but I decided I wanted to make a mix less reliant on freeze dried chicken so I have come up with this. The ingredients are as follows:
Millet
Shelled peanuts
Red pepper
Mealworm
Wheat flaked
Rye
Spelt (dinkel, flaked)
Spelt (green Dinkel)
Dill seeds
Dari, sorghum
Oats flaked
Carob
Flaked peas
Nettle seeds
Foniogold
Cucumber seeds
Hemp
Clover seeds
Pumpkin seeds
Linseed
Watermelon seeds
Wicken/vetch
Crushed barley
Spinach seeds
Timothy grass
Canary seed
Buckwheat
Amaranth
Thrive chicken
Sunflower seeds
Flaked soya
The values are 18.36% protein, 10.26% fat and 10.97% fibre. I haven't been as strict with getting the values perfect as I'd rather it had slightly higher fat and fibre and have Jasper enjoy the mix more and eat all of it. I will be creating a new mix on Mixerama and linking that soon.

Wow! You should go into business I think the Amaranth is supposed to be a source of protein as well - not sure how much.

That looks really good Chesca, it must be really satisfying to see LJ tuck in to something you've made especially for him, taking his likes and dislikes in to consideration but still giving him a well balanced diet
