Default Hamster safe birthday cake!

So I wanted to make Charlie a cake for his second birthday, and decided to try and make something up that would rise like a cake, without using raising agents, fat or sugar. So here's the recipe if anyone is interested. The whisked egg whites give it bulk and air so it comes out looking like a cake but doesn't actually rise during baking.

This recipe is suitable for Syrians - if it's for a dwarf hamster, just leave the raisins out and put extra pumpkin seeds in or something. And a different kind of topping

Hamster Carrot Birthday cake

1 egg – separated – white and yolk

1 rounded teaspoon of finely grated carrot

2 rounded Tablespoons of porridge oats (or oatmeal) – I used a 15ml tablespoon measure

Two of these

1 rounded tablespoon of plain flour (no raising agent added)

4 raisins
4 pumpkin seeds
2 small pieces of walnut

For decoration:

Mashed banana spread on top as icing and a pecan nut, Hammy chocolate drop or similar on top.

1) Put all the ingredients except for the egg white in a bowl, and mix them together.

2) Whisk the egg white until stiff. Scrape it into the mixture and slowly stir it in so as not to squash out all the air.

3) Divide the mixture between two large paper muffin cases in a muffin/bun tin (I used a silicone muffin tin and no paper cases and a tiny bit of butter to grease the two sections I used).

4) Fill the mixture to the brim and rounded up in the middle a bit, as they won't really rise any more during cooking.

5) Put in the oven at 180 degrees (conventional oven) for about 25 to 30 minutes (mine took just under 30 minutes).

I was going to decorate the top of one and freeze the other one, but decided to slice the tops off and make a Victoria sandwich instead

Yet to be completed! So tomorrow I'll use the mashed banana as the sandwich filling and use a different kind of topping (still thinking about that one). Will post a photo of the finished cake.

The texture is more like a scone than a cake.

This is an awesome cake Serendipidity and I'm certain Charlie will love it, I'm very tempted to make another cake for Willow but my parents are a bit tired of all my DIY's!

Mmmm that looks yummy! How do you seperate the egg white and yolk? Might have to make this as a treat for Sweep for when he comes back from the hamster sitter! He'll be glad it has walnuts in! I hope Charlie enjoys it! What you going to use for the topping?

You could eat the hammy food (seed mix) yourself with Charlie and then both of you share the birthday cakes for desert! lol!
