Mealworms can be quite high in fat so two a day is plenty but it would be good to feed something like plain cooked chicken a couple of times a week, just a small piece, to up the protein.
Lettuce every day isn't a good idea, maybe once or twice a week would be plenty.
There are lots of veg to choose from & she needs variety & not too much of any one thing.
Here's a list of some you can try.
Safe veg, those marked * are relatively high in sugar so only feed to diabetes prone species as an occasional treat if at all.
