He is probably just getting used to the different sounds and all of his new surroundings. In time, hams often get braver and come out from their hiding places more. I would keep talking softly to him even if you can't see him so he can get used to your voice and know that you are not to be feared. I would also use the tissue trick if you haven't already.

The tissue trick is one of the beginning steps during the taming process and is a means for him to get used to your scent. Basically, you get an unscented tissue and place it in your sleeve for a few hours so it will acquire your scent. Be sure that you do not have any scented lotion or perfume on during this time. Then, tear the tissue up into strips and place it into your little one's cage. He will gather it up and use it to for his nest and gain comfort with it. Then, when the time comes for you to actually actively begin the taming process, he will already be a step ahead by being familiar with your scent and know you are a comfort. This trick has given me, as well as many other ham-parents, a lot of help.

Lol, I still give my Syrian Eros a few tissues with my scent on it even though she is 100% tame and as friendly as ever. She just loves snuggling with the tissues so I just decided to keep on giving them to her. That way she always feels that I am around when I have to go somewhere during the day. I feel it also helps keep her familiar with your scent when you are having someone else hamster-sit your little one while you are on a vacation and aren't able to take her along.

The cage isn't that big really so as long as there isn't too much open space he should be fine, you can use things like cardboard tubes, egg boxes with a couple of holes cut in the end, coconuts hides, that sort of thing to fill areas up if they are empty so he doesn't have too much open space that will make him feel a bit vulnerable, they love cork tubes too, it doesn't have to be things that allow him to hide away completely all the time just little areas of cover or shelter around the cage he can explore & feel safe in.
It will take some time for him to feel comfortable so don't worry too much just yet!
If you have a photo of your cage set up we might be able to suggest some things to help him feel more settled.

I have used a Hamster Heaven for a Chinese before and she was more than happy in it but it may still be a possibility that he might be finding it a bit too overwhelming, particularly after the smaller environments in pet shops. At present I would leave him in his current cage to see if he gets used to it and maybe we can help you with some ideas on how to make him feel a little less vulnerable. When I used that cage, I had a wooden shelf made out of an Ikea Knuff Magazine File and used a hammock from the roof of the cage.

This was the setup I used: Jessie's Cage by Metallica Hamstery, on Flickr

All hamsters can take some time in adjusting to a new home so at the moment I wouldn’t worry too much... see how he is after a few weeks and go from there.

I definitely think he feels too exposed in the cage. I canít upload any photos of the cage, it says theyíre too big and I donít know how to resize them on my iPhone. The cage has both the platforms in and several tubes, boxes with holes either end, a sand bath and a wood bridge. Bridges up to the platforms too but he never goes up there for more than a quick peek. Iíve ordered some hammocks to hopefully make the platforms seem less exposed for him. He doesnít use the saucer wheel that we have so Iíve just ordered a different wheel and hopefully heíll use it as itís more enclosed for him. Heís fantastic when out of the cage though. We can hold him and stroke him and he wanders around on us sniffing and exploring, but doesnít run and hide like he does in the cage. He went to sleep on my daughters lap earlier so he must be feeling comfortable with us

This is my current set up for my new baby Syrian I have had him for just about 3 weeks. I don't use any of the plastic stuff supplied with the HH cage. He has plenty to hide in not least his 2 room house. The roof doubles as a shelf and he feeds up there. The granite helps with keeping nails worn. He loves his Sputnik as most of them do. I will upgrade him when older if he needs more space.
It may give you ideas like Fluffagrams set up.

He sounds adorable It can take time to get things just right for them in the cage so don't worry too much.
Have you completely filled the base of the cage with substrate? They all have different personalities, likes & dislikes but the one thing all my Chinese have had in common is a real love of burrowing & digging so they need lots of substrate, being able to dig down makes them feel safer too I think.
They love cork tunnels or tubes (these need to be frozen for about a week if you ever get any!) they enjoy climbing on them & they make great little hideouts too, I found a cork tunnel in the middle of the cage worked really well for my youngest who was a bit timid to begin with.

I don't know if this will work as I don't have a phone but someone said they selected the photo to email to themselves chose small size for the email then you have a smaller copy of your photo to upload, might be worth a try!
