Default I don't see my hamster

Alright so I got Miso about almost 2 months ago and at first she would come out of her burrows at 8-9PM.
for the past 3 weeks she does not come out of her burrows until 2-3 AM and does not stay out after 5AM. I know that because I never see her.
I think she started to lose interest in stuff she had interest in outside (like her coconut fiber digging box) because at first her wheel got dirty from coconut fiber sticking to it, but now it never gets dirty with fiber.
She doesn't seem like she wants to escape and shes quite comfortable with her burrows, but I literally never see her. I can't interact with her at all with the kind of enclosure I made for her.
Sure I could put her in a much shorter enclosure like ikea detolf but I want to give her that bedding depth.
It's difficult to want to give her the best possible home I can but also not see her at all and not interact with her.
The thing is, she is used to hands and has no problem being picked up, only after a few minutes she gets stressed and tries to get out of my hands, but it seems like she simply doesn't care whatsoever for interaction, which I expected but didn't expect that I would not see her even once unless I literally move bedding around to search for her deep underneath (which I know is very bad and I've only done 3 times when I freaked out she may be dead or something).

I really don't know what to do, I dont expect everyday interaction, but right now the situation is 0 interaction whatsoever, I don't even see her tunnels are at the back where I cant see).
Should I move her to a different enclosure with less bedding? I really dont know what other option would allow me to at least see her.
This is her current home, its 120x50 cm and the bedding is 35cm deep (totel cage height is 65cm):

Hi there, firstly your set up looks amazing. I'm sure your hamster loves it.

Maybe you have a ghost hamster.

Consider taking your hamster to a vet (with experience in hamsters) to rule out any health issue.

My hamster is mainly motivated by food so I am feeding him a variety of small amounts of fresh fruit and veg, dried plant forage from petshop, that is what gets my hamster interested.

Get a pop up playpen. Put your hamster in the playpen with tunnels and some sunflower seeds.

Sorry if you've already tried this.

Sometimes they wait until the lights are out.

As said already your enclosure is amazing and it could be taken as a compliment from your hamster that she loves it so much she doesn’t want to leave.

You could try a vets to rule out any concerns. You have had her two months so the first month she may have been coming out due to curiousity and now she’s settled might just be comfortable and relaxed.

As said as well about the light and with food as well you could hold food in the cage and see if she approaches your hand to get it.

Another thing it may be which I do doubt since you have great ventilation and the weather hasn’t been shockingly hot, but maybe she is a little warm.

Just check her water and wheel is spinning, I think people have said about using slate so it’s a cold surface for them to cool on. My hamster seemed a little more sleepy recently and ended up sleeping outside her normal nest in an open area but just keep a window open I’ve put my fan back in my room but don’t aim it at their enclosure. I’m not saying it is that since mine still wakes normal time, it’s just a thought as weather has been warmer recently.

I think your cage is awesome and your hamster sounds like she is having the best hamster life ever. I would 100% not move her. I am sorry you don't get to see her though. Have you thought about getting a hamster cam, you can pick one up for about £20 (although I think you might be in the USA as you have a niteangel wheel.)
With a night cam you would be able to get to see when she is up and what she is up to and maybe alleviate any worries you have about her.

I am always worried it is too cold for my hamster. Can't imagine it being too hot lol.

Your hamster cage is beautiful.

My hamster was the same. He used to come out between 9pm-11pm and just linger around, though he then changed to coming out only after 5am. Recently, he's changed again, now getting up at 12am-2am. I think when they are young, they don't necessarily sleep more, but they are working out what time suits them best to wake up at. Like people, some of us are more active at night whilst others are more active in the morning. I'm sure they feel more active at certain times, and they are just getting used to that in their little bodies.

I wouldn't recommend changing enclosures. She seems really happy in this current one - just because you can't see her, it may just mean she is not ready for you to see her.

You could start making premade burrows next cage clean? Like start a burrow off by putting a tunnel half in and half out the bedding. That could encourage her to build from there.
