Taming and Bedding Thickness
I have a new 6 week old syrian hamster. I have given her a couple of days to get settled in and I want to prepare for/start the taming process. Right now she has about 6-8 inches of bedding on one side of her cage where she loves to burrow and spend most of her time. However, I read from some sources that a thick layer of bedding can make the taming process harder and that it's better to start with a 1 to 2 inch layer until they are tame. Is this good advice? I don't want to stress her out, but I don't want her to hide when I'm around either.

Hello and welcome
I am unsure where you have heard that advice but I don't see how it would make any difference as you would be taming outside of the cage
Remember, hamsters are prey animals and will want to naturally hide from anything percieved as a threat until they get used to you. Even then, they can still hide away at times

I think re the bedding people may have been meaning when they are have really large cages, like 2m x 1m or bigger and they can pile the bedding really high.
I think you should be ok with 6 inches.
Taming can be done out of the cage too, depending on what species of hamster you have and their nature, but I normally start by just trying to give them a bit of food, sometimes I don't do this until a week is up rather than a few days, it depends on your hamster, just see how she reacts to you.
